Our matcha is directly sourced from a 3rd generation family farm located in the lush hillsides of Wazuka, Kyoto, Japan. The clay-rich soil of the region is optimal for cultivating the green tea leaves that ultimately become our ceremonial-grade matcha.

Superior Cultivation: The Okumidori Cultivar

The Okumidori Cultivar is a remarkable blend of Yabukita and Shizuoka Zairai tea plants. This well-balanced cultivar delivers a delightful combination of umami, a touch of astringency, and a refreshing, elegant aroma.

Traditional Harvesting

The tea leaves are plucked once a year in May during the peak harvest season. After being picked, the leaves undergo a rigorous process of steaming, drying, sifting, and cutting to prevent oxidation.

Guaranteed Freshness

The leaves are stone-ground into a fine powder, sealed in airtight bags, and placed inside Dona tea tins. We air-freight our matcha direct from Japan, shortening shipping times from 3-4 months to several weeks. To maintain freshness, we recommend storing the matcha in the refrigerator.

Matcha Preparation

If you don't have a dedicated matcha or tea bowl, any wide-mouth, ceramic, or porcelain bowl will work. We suggest using a matcha whisk made from white bamboo to thoroughly combine the matcha powder with water without scratching your bowl.

Enjoying Matcha

To prepare a classic matcha, scoop 1 tsp (2 g) of matcha into your bowl, add 2.5 ounces of 170°F hot water, and whisk vigorously until the matcha is frothy and well-combined.

For an iced matcha latte, pour your whisked matcha from the bowl into a glass of ice, add 6 oz of your choice of milk, and stir to enjoy. For a hot matcha latte, add the whisked matcha to a mug, then add 6 oz of hot or steamed milk.
